Healthy Endeavors

So about 2 weeks ago Willie and I watched two documentaries (courtesy of NETFLIX), one called Food, Inc. and the other called Food Matters.


Well these two documentaries really scared us. So we have resolved to eat healthier. Our plan is to eat unprocessed foods as much as we can, to eat loin meat (i.e., pork loin, sirloin, etc.), and to eat fruits and veggies as much as possible. We are currently on week two of this excursion and I have to admit we had to cheat a bit for our anniversary, sudden urge for In N Out (although it is the healthies fast food chain because they use pure beef, and fresh cut potatoes)! Aside from it isn't too bad!

But I do have to note that our dinner tonight may not be the healthiest due to the use of mayonnaise and parmesan cheese. I will justify it though...

Tonight we are having Parmesan Crusted Salmon (red wild salmon as opposed to farmed salmon, basically anything wild is better watch Food, Inc. and you will know why). This is one of the recipes that was passed down to me at my bridal shower. This recipe belongs to my Aunt Djinkie, so kuddos to her! The recipe is quick and easy. It asks for salmon, salt & pepper, paprika, dried parsley, parmesan cheese, and mayo. Comment me with your email addy and would be glad to send you the recipe (I will name it after my Aunt since she gave it to me: Djinkie's Parmesan Salmon!) So this is what we are having for dinner accompanied with brown rice (no more white rice for us only for special occasions) and left over veggie medley (basically veggies that I randomly picked from the store last week that are going to go bad soon; zucchini, one potato, tomatoes, onions, garlic, green beans, and eggplant) from lunch. As you continue to read this blog you will see how I randomly come up with recipes... Willie is amazed every time, like last weeks impromptu eggplant parmesan having to use shake and bake because I didn't have breadcrumbs and I still haven't unpacked our kitchen so I do not know where my best friend Bisquick was at.

Any who I look forward to sharing my impromptu recipes (they're impromptu because it is basically using what I have and making something up with it). Meal planning is like my lesson planning when I was a teacher... I can plan all I want but every day's lesson plans go out the window because I come up with a better one at the last minute!

New Rivera Adventure!

This blog is for friends and family. A way to keep in touch with you guys all at once!

So as you may or may not know Willie and I moved to Moreno Valley (MoVal)! Why? I know we ask ourselves the same thing... jk! Well we moved here in pursuits for Willie to get into a PA program out here. It is a big risk that we are taking as we are 1 hour away from family, church, and friends and also as I had to quit my job to relocate. The risk is worth taking with my hubby with Christ by our side. At times it gets scary because we question our decision, but in the end we find peace in Christ!

There are a lot going on in MoVal for us... we celebrated our one year anniversary today... we are trying to eat and live healthier lifestyles (so this blog may entail our journey in the kitchen, at the super market, at the gym, or at the park)... and I am trying to find a job... and we are figuring our way in this new adventure in front of us... Moval!
